007 pinot noir this morning and it would be a good time to taste the wine.Racking is the process of pumping wine from one barrel to another. The dead yeast, and other sediments are left behind in the emptied barrel. The empty barrel is cleaned and the wine pumped back into it's barrel, topped off and sealed.
I had a small taste of the wine back in the fall when it had completed fermentation. At that point it was very harsh and almost devoid of fruit characteristics. Today's sample showed great progress towards being a good wine. The fruit was very noticeable and harshness was gone. Marty was pleased so back in the french oak barrel for several more months of aging.
